The signature of San Diego's Bali Hai restaurant on Shelter Island, served since the 1950s in its famous goofy-faced mug. Coffee liqueur is the unexpected twist, threading a dark roast through the pineapple. Tiki kitsch on the outside, surprising depth on the inside.

Ingredients
- Dark Rum 30 ml
- Gold Rum 30 ml
- Coffee liqueur 15 ml
- Pineapple Juice 45 ml
- Lemon Juice 22 ml
- Simple Syrup 15 ml
Method

Flash blend all ingredients with crushed ice for a few seconds.

Pour into a tiki mug or hurricane glass and top up with crushed ice.

Garnish with a pineapple wedge.
