
John Collins
Named after a headwaiter at Limmer's Hotel in early nineteenth-century London, the John Collins is the long, lazy way to drink gin. Built straight in the glass over plenty of ice, it is essentially sparkling lemonade for grown-ups. A garden-party classic that never tries too hard.

- Lemon Juice 30 ml
- Simple Syrup 15 ml
- Soda Water 60 ml

Fill a collins glass with ice cubes.

Pour in the gin, lemon juice and sugar syrup.

Top with soda water and stir gently.
