The orange glow of every Italian terrace at six o'clock. The Spritz dates back to Habsburg soldiers in Veneto who watered down the local wine, and grew into the world's favourite aperitivo. Light, bittersweet and made for golden-hour people-watching.

    Fill a wine glass with ice cubes.

    Pour in the prosecco, then the Aperol.

    Add a splash of soda water and stir gently.

  4. 4

    Garnish with a slice of orange.
