Old Cuban
Audrey Saunders' modern classic is essentially a Mojito in black tie: the freshness of a Cuban daiquiri lifted by French bubbles. Born in New York in the early 2000s, it became one of the defining drinks of the cocktail renaissance. Elegant enough for celebration, refreshing enough for a warm evening.
Muddle and build
Afwerken met Mint sprig.
- Aged Rum 45 ml
- Lime Juice 22.5 ml
- Simple Syrup 30 ml
- Angostura bitters 2 dash
- Mint Sprig 6 leaf
- Champagne 60 ml

Gently muddle the mint leaves with the lime juice and simple syrup in a shaker.

Add the rum and bitters, fill with ice and shake well.

Double strain into a chilled coupe glass.

Top up with champagne and garnish with a mint sprig.
